What's been happenin' in the kitchen

So lately, I’ve been cooking up a few things here and there. This week I’ve made Broiled Salmon with Mustard and Fresh Herbs and a batch of Red Velvet Cupcakes for work birthdays.

 

Broiled Salmon with Mustard and Fresh Herbs

4 6 oz salmon fillets

Salt and pepper

1 T olive oil

1 T dry white wine (I used Sherry in a pinch)

¾ tsp minced fresh rosemary

¾ tsp minced fresh thyme

2 T Dijon mustard

2 T whole grain mustard

2 garlic cloves, minced

 

Preheat the oven to broil. Salt and pepper the salmon. Broil the salmon for 5 minutes. While the salmon is broiling, mix together the rest of the ingredients in a bowl. Remove the salmon from the oven and cover with the mustard sauce. Turn the oven down to 400 degrees and return the salmon to the oven. Bake until the salmon is no longer dark pink in the middle. It’s delicious!
