Steak Reubens
I made up Steak Reubens last night for dinner. Man they were good! Something we very rarely eat, but I had some leftover rye bread and some leftover Gruyere cheese and I thought, why not?! Glad I did! We loved it!
Steak Reubens
Flank or skirt steak (I used a ribeye because that’s what I had)
Sauerkraut
Shiitake Mushroom caps (I used white button)
Gruyere Cheese
Thousand Island Dressing
Rye bread
Butter
Cook the steak to your desired doneness. Personally speaking, medium-rare is ideal. Slice it up across the grain. Liberally butter one side of each slice of rye bread. Heat up the griddle and lay the rye bread butter side down. Place some gruyere cheese on top of the bread, then the steak, then the mushrooms and then the sauerkraut. On the opposite side of bread that the butter is on, lather that with Thousand Island Dressing. Lay that piece of bread butter side up. Now one the cheese is melted and the bottom side of bread is nice and golden brown, do your best to flip it over. This was a two-handed effort on my part. I only managed to drop one tiny piece of steak into the skillet. Whew! And then…chow down. It’s not a light sandwich. Don’t be fooled. So it’s a “once in a while” type dinner. But it’s oh so good.

Mom's Birthday Weekend Con't
We stayed at a wonderful B&B called the Pincrest B&B. It’s run by an older couple who decided to do this in their retirement. What an entertaining couple! We couldn’t help ourselves but to talk and laugh with them each morning and each afternoon. They were so sweet to even make mom a chocolate pound cake upon arrival for her birthday. They were sweet and fun to be around. And we very much enjoyed ourselves!

Mom's 60th Birthday
So Jennifer, Christopher and I came together to celebrate mom’s 60th birthday this year. What a milestone! What a weekend!
Months prior, we told mom to block off the weekend of August 16-18 because we were taking her on a trip. She wouldn’t know where would be going or what we would be doing.
We gave her a packing list and what time to be ready to get in the car!
Asheville, NC was our destination!
I put mom in the car around 8:00 and we headed NW. We were scheduled to meet Jennifer for lunch at Sunny Point cafĂ©. This is a great place that mom found on the internet and a place Beau and I normally stop at when we’re passing through. Everything is made in house and it’s local and fresh and delicious…and rich.
We headed towards Asheville and made a little stop for some shopping. All the while, still keeping mom guessing. She thought Asheville was just a stop. Heh. Heh.
But from there we took her to Pinecrest Bed & Breakfast. Mom loves B&Bs! As do most girls, especially the Kimbrell girls. J
We spent the weekend shopping and relaxing and eating and chatting and laughing. It was so wonderful!
